How to Store Prestige Turbo Yeast
Refrigeration is the optimal environment to store dried yeast; this keeps its temperature consistent and lengthens its shelf life. Liquid and cultured forms of yeast should always be stored in pure and sterile water (you can find methods of washing yeast online easily).
Unused yeast that has not been properly stored may become dormant, leading to fermentations to either cease altogether or become very slow. Possible reasons include using the wrong strain (such as baker’s yeast); no nutrients were added; water temperature wasn’t adequate for fermentation, osmotic pressure was too great and killed the yeast or some combination thereof.
Follow the directions in your Turbo Yeast package carefully in order to keep it alive as long as possible. Never store Turbo in the freezer as this will destroy it, instead keep it sealed container filled with pure water before adding immediately to sugar solution – as soon as it starts working it removes oxygen, reduces pH of wash water and ferments sugar – slow or no fermentation may result.
Stored yeast can become very clumpy when added directly to sugar solutions, making it hard to use effectively. When using Turbo, add it directly into the sugar solution – do not soak first as some other yeasts do as this can alter its osmotic pressure balance between cell interior and exterior.
