Turbo Yeast is an exclusive blend of the lowest volatile production yeast, antifungal agents and nutrients designed to provide exceptional strength during fermentation. Containing high levels of trehalose for internal strength protection against osmotic shock during fermentation. Turbo Yeast can be added directly into sugar water solutions without needing to soak first; unlike other forms of dry yeast that require 15 minute soak times prior to being mixed into solutions. As part of the production process of dried yeast, high levels of phospholipids accumulate within the plasma membrane of yeast cells during manufacturing. Phospholipids help bind oxygen molecules to yeast cells and their absence can result in fermentation’sticking’ or stopping altogether. To avoid this from happening, we add trehalose into each sachet to maintain sufficient levels of phospholipids to allow proper fermentation to proceed.

Starters come in different forms: traditional starters are available at bakeries or you can purchase premade ones ready-made from bakeries; Lacey of Sullivan Street Bakery and co-author of The Artisan Bread Kitchen prefers using liquid starter style mixture, known as biga. He claims a good starter can produce breads with open crumb texture and delicious flavors but needs time to develop properly.
